Tomato chutney


Tomato chutney

There are two types of chutneys we make from tomato. One is made from raw tomato and other one with red tomato. Both tastes different. Try this red tomato chutney.

Ingredients :

  1. Tomato 3 to 4 wine red tomatoes cut into pieces
  2. Two tbsp red chilli powder
  3. 3 to 4 garlic cloves cut into pieces
  4. A tbsp of ginger
  5. Salt as per taste
  6. A tbsp of oil
  7. Fresh coriander leaves and curry leaves a tbsp

Method :

Take a pan on heater. Add oil and once the oil is hot add garlic and fry it.  Add ginger and tomato pieces and fry till tomatoes are soft. Now add red chilli powder, salt, curry and coriander leaves. Mix it well and allow it to cool. Grind this for few sec.  This chutney should not be like a paste. If it is too watery type boil this few minutes till the chutney appears to be thick. Serve this with either chapati or jowar roti.

Ridge Gourd Skin Chutney


Ridge gourd skin chutney

We make lot of dishes from ridge gourd like ridge gourd dal, vegetable ,bhaji’s(pakodas),raita.But for all these we peel of the skin of ridge gourd. But  we can make chutney with the skin of ridge gourd. It is good combination with chapati and jowar roti’s.

Ingredients:

  1. A cup of ridge gourd skin cleaned
  2. Few pieces of ridge gourd finely chopped
  3. 3 to 4 green chillies
  4. A small piece of ginger
  5. 2 Tbsp of til
  6. A small  tamarind
  7. A small piece of Jaggery
  8. Few curry leaves
  9. Fresh coriander leaves
  10. Oil 1 tbsp
  11. 1 Tbsp mustard seeds
  12. Salt as per taste
  13. A pinch of turmeric powder and hing

Method:

  • Take a pan on heater add oil once hot add mustard seeds allow it to crackle.
  • Add turmeric powder, hing, ridge gourd skin, ridge gourd pieces, ginger, curry leaves, green chillies,til and fry it.
  • Once cool add salt, tamarind, coriander leaves , Jaggery and grind it.
  • Serve with chapati , jowar roti’s or  curd rice.

Spinach stem chutney (palak detina chutney)


Spinach has a high nutritional value and is extremely rich in antioxidants, especially when fresh, steamed, or quickly boiled.We make lot of dishes with  spinach leaf. Along  with the leaf the stem of spinach can be utilized to make chutney. It tastes very good when eaten with chapati and curd rice.

Ingredients:

  1. A small bunch of palak  stem cut into piece
  2. Few palak leaves
  3. 3 to 4 green chillies
  4. A small piece of ginger
  5. 2 Tbsp of til
  6. A small  tamarind
  7. A small piece of Jaggery
  8. Few curry leaves
  9. Fresh coriander leaves
  10. Oil 1 tbsp
  11. 1 Tbsp mustard seeds
  12. Salt as per taste
  13. A pinch of turmeric powder and hing

Method:

  • Take a pan on heater add oil once hot add mustard seeds allow it to crackle.
  • Add turmeric powder, hing, palak stem,  leaves, ginger, curry leaves, green chillies,til and fry it.
  • Once cool add salt, tamarind, coriander leaves , Jaggery and grind it.
  • Serve with chapati or curd rice.

Raw Tomato Chutney ( green tomato chutney)


 

 

Preparation Time: 5 mins

Cooking Time : 15 mins

Ingredients:

  1. 2 Medium size Green tomato  cut into big pieces
  2. 3 to 4 green chillies cut in to pieces
  3. 1 Inch ginger finely chopped
  4. 2 Tbsp  Til
  5. 1/2 Tbsp Jaggery
  6. A pinch of hing
  7. 1/2 Tbsp turmeric powder and mustard seeds
  8. Fresh Coriander leaves and curry leaves
  9. Salt as per taste
  10. Oil 1 Tbsp
  11. 1/2 Cup grated coconut (optional)

Method:

  • Take a pan on heater add oil once hot add mustard seeds allow it to crackle.
  • Add green chillies, curry leaves, ginger and green tomatoes and fry it.
  • Add turmeric powder and til and allow it to cool
  • Add salt and Jaggery, grated coconut  and  coriander leaves and grind it into paste
