Avarekalu Pulao (Hyacinth Bean Pulao)


One more dish which I prepared out of Avarekalu is Avarekalu pulao. Simple quick and tasty rice that can be prepared with less ingredients. It is a good dish for the lunch box for kids. Raita along with it adds more taste.

Ingredients:

  1. 1 Cup rice (uncooked)
  2. 1 Cup Avarekalu ( hyacinth bean)
  3. 3 green chillies chopped
  4. 1 Cup fresh coconut grated
  5. 1 inch ginger finely chopped
  6. 1 Cup fresh coriander leaves chopped
  7. 2 tbsp. jeera and mustard seeds
  8. 2 tbsp. coriander powder.
  9. Oil 3 to 4 tbsp.
  10. Salt as per taste
  11. Fresh curry leaves
  12. 1/4 tbsp.  of sugar and a pinch of hing.

Method:

Grind the coconut, ginger, coriander leaves , jeera and green chillies in to paste and keep aside.

Take a cooker pan on heater add oil and once it is hot add mustard seeds allow it to crackle. Now add curry leaves, coconut paste and hing and fry it in oil. Add Avarekalu and cook for few mins.

Now add 2 cups of water , salt, sugar, coriander powder to it.

Add the uncooked rice ( wash twice in water and drain all the water) to it and close the lid and cook it for 2 whistle.

Serve hot with raita.

Masala Nutchu (Broken jowar khichadi)


Broken jowar or so called as jowar nutchu is really good for health. The khichadi prepared from it with lot of vegetables makes it tasty and healthy meal dish.

Ingredients:

  1. 1 Cup broken jowar (nutchu)
  2. 2 Green chillies finely chopped
  3. 1 Small cup green peas
  4. Red and green capsicum finely chopped ( small cup)
  5. 1 Medium size onion finely chopped
  6. Fresh curry leaves
  7. Fresh coriander leaves
  8. 4 tbsp. oil
  9. Salt as per taste
  10. 1 tbsp. mustard seeds
  11. A pinch of turmeric powder
  12. 1 Tbsp sugar

Method:

  • Take  a bowl of broken jowar add water to it and keep it in water for few mins. Then drain all the water  and keep aside.
  • Take  a  container on heater and add oil to it. Once the oil is hot add mustard seeds allow it  to crackle.
  • Add turmeric powder, curry leaves, onion, green chillies and fry till onion is golden brown.
  • Now add capsicum and green peas and fry till they are soft.
  • Add 3 cups of water, salt, sugar and coriander leaves.
  • Once the water starts boiling add the broken jowar and keep on stirring so that no lumps should be formed.
  • Cook till the khichadi becomes bit thick.
  • Garnish with coriander leaves and serve hot.

Beetroot Rice


Beetroot rice is one of the easiest rice recipe that can be prepared with less efforts. It can be prepared by two method. Here I have presented both methods. Both the methods give same taste but the color is bit different.

Ingredients:

  1. 1 Cup uncooked rice
  2. 1 Cup grated beetroot
  3. 1 Small onion finely chopped
  4. 2 to 3 garlic cloves finely chopped
  5. 1 Inch ginger finely chopped
  6. 2  tbsp. red chilli powder or green chilli 2 to 3 finely chopped
  7. 1 tbsp. garam masala
  8. Salt as per taste
  9. Fresh coriander leaves to garnish
  10. Oil 4 to 5 tbsp.
  11. Mustard seeds 1 tbsp.
  12. turmeric powder 1/2 tbsp

Method 1:

Take a cooker pan on heater and add oil and once it is hot add mustard seeds. Allow it to crackle. Add turmeric powder. Add garlic and ginger and fry  it. Now add onion and fry till golden brown. Add grated beetroot and fry it for 2 mins. Add salt, red chilli powder, garam masala, salt and 2 cups of water. Now take the uncooked rice wash it twice in water and drain all the water and put it in the cooker. Close the lid and cook it till 2 to 3 whistle. Garnish it with coriander leaves. Serve hot.

Method 2:

Cook the rice and keep aside. Take a  pan on heater and add oil and once it is hot add mustard seeds. Allow it to crackle. Add turmeric powder. Add garlic and ginger and fry  it. Now add onion and fry till golden brown. Add grated beetroot and green chilies and fry it for 2 mins. Add salt, garam masala, salt and  little water and cook till the beetroot is cooked well. Now add the cooked rice and mix well.  Garnish it with coriander leaves. Serve hot.

Vangi Bath (Brinjal Rice)


Vangi Bath is a famous rice dish of Karnataka. It is usually prepared from green brinjal. It is spicy and tasty rice recipe.

Ingredients:

  1. 1 Cup uncooked rice cleaned in water twice
  2. 2 Green brinjal of medium size cut into long strips
  3. 1 medium size onion cut in to long strips
  4. 2 to 3 garlic cloves finely chopped
  5. 1 tbsp. red chilli powder
  6. 1 tbsp. masala powder [ (huli powder)/ (Vangi bath powder)]
  7. 2 tbsp. urad dal
  8. 2 tbsp. Chana dal
  9. 4 tbsp. oil
  10. 1/2 tbsp. mustard seeds
  11. 1/4 tbsp. turmeric powder
  12. Salt as per taste
  13. Fresh coriander leaves
  14. fresh curry leaves
  15. 1 tbsp. of jaggery
  16. 2 to 3 tbsp. of tamarind water

Method:

Take a cooker pan on heater. Add oil and once the oil is hot add mustard seeds. When the mustard seeds starts crackling  add urad dal and Chana dal and fry them till they are golden brown. Add curry leaves and turmeric powder. Add garlic and onion and fry them till golden brown. Add green brinjal and fry it for 2 mins. Now add tamarind water, salt, red chilli powder, masala powder, jaggery. Add water of 2 cups. Now add the rice which is cleaned in water in to the cooker. Close the lid and cook on medium flame.

Cook it for 3 whistle. Garnish with  coriander leaves and serve hot along wit raita.

 

Cabbage Pulao


Cabbage Rice was really a tasty rice dish which is very simple and quick.

Ingredients:

  1. 1 Cup Rice
  2. 2 Cups thinly sliced cabbage
  3. 2 to 3 green chillies thinly sliced
  4. 1 Small Cup peas
  5. fresh curry leaves
  6. 1 Small capsicum finely chopped
  7. 1 Tbsp pepper powder
  8. 1 Tbsp jeera
  9. 2 to 3 cinnamon sticks
  10. Salt as per taste
  11. 3 Tbsp of oil
  12. 1 Tbsp Mustard seeds

Method:

Cook the rice and keep aside. Take a pan on heater add oil and once the oil is hot add mustard seeds allow it to crackle. Now add jeera ,curry leaves, cinnamon stick and fry it. Add green chillies, capsicum and fry it. Add sliced cabbage and peas and cook it till they are soft. Add salt and pepper powder. Add the cooked rice and mix well. Cabbage pulao is ready serve hot

Paneer Fried Rice


Paneer is my favourite and I always keep trying new dishes out of it. Today’s lunch was paneer fried rice. It was easy and quick recipe with less ingredients. Its a kids special too. When it comes to fried rice it is common to use soya and chilli sauce. But this rice is bit different. Try it out.

Ingredients:

  1. 1 Cup basamati rice
  2. 1 Small capsicum finely chopped
  3. 1 Medium size Carrot finely cut into pieces
  4. 1 Bunch of spring onion finely chopped. (also  use white part of spring onion along with green leaves)
  5. 1 Cup of paneer cubes
  6. Salt as per taste
  7. 2 Tbsp olive oil
  8. 1 Tbsp pepper powder
  9. 1/2 Tbsp mustard seeds
  10. 2 to 3 garlic cloves finely chopped

Method:

Cook the rice and keep aside. Take a pan on heater add oil. Once the oil is hot add mustard seeds and allow it to crackle. Add garlic cloves and fry it. Add white spring onion and fry it. Add capsicum and carrot and fry for few mins, Add salt and cook them till they are soft. Add pepper powder and paneer cubes and fry it. Add spring onion green leaves and fry for few mins.

Raajgiri Leaves Rice

Today i was thinking what dish  should be prepared for the lunch. Just checked out my fridge and found this leafy vegetable and thought of trying rice dish out of this. It was just awesome and yummy rice dish.

Ingredients:

  1. 1 Cup rice
  2. 1 Cup raajgiri leaves (red colour) cleaned and finely chopped
  3. 1 Tbsp red chilli powder
  4. 1 medium size onion finely chopped
  5. 2 to 3 garlic cloves finely chopped
  6. 1/2 Tbsp garam masala
  7. salt as per taste
  8. oil 2 to 3 tbsp
  9. 1/2 tbsp mustard seeds and turmeric powder

Method:

Cook the rice and keep aside. Now take a pan on heater add oil once hot add mustard seeds . Allow it to crackle. Add garlic and fry it. Add turmeric powder. Now put the chopped onion and fry till golden brown. Add the chopped raajgiri leaves and cook it. Add salt, red chilli powder, garam masala and stir well. Add the cooked rice and mix it well. Serve hot.

 

Methi Leaves Chitranna

Ingredients:

  1.  1 Cup rice
  2. 1 Cup methi leaves finely chopped
  3. 2 Green chillies finely chopped
  4. 1 Small Capsicum cut in to small pieces
  5. 1 Small cup peas (optional)
  6. Few curry leaves
  7. 1/2 Tbsp mustard seeds and turmeric powder
  8. Oil 2 Tbsp
  9. Salt as per taste
  10. 1/2 Tbsp of sugar
  11. A pinch of hing
  12. 2 to 3 tbsp of grated coconut
  13. 1 Inch ginger finely chopped

Method:

Cook rice and keep aside. We can even do this if there is any left over rice.

Grind the grated coconut, ginger and keep aside.

Take  a container on heater add oil and once hot add mustard seeds. Add curry leaves  turmeric powder and hing and stir it.Add green chillies and capsicum and fry it.Even we can add peas to it. Now add the grated coconut and fry it for  few mins. Add the methi leaves and fry till it is cooked well. Add salt and sugar stir it. Add the cooked rice and mix it well.

Ingredients:

  1. 1 Cup Rice
  2. 1 Medium size Kohlrabi (navil kosu) finely chopped (peel the skin off)
  3. A small capsicum finely chopped
  4. A small bowl peas
  5. 3 to 4 green chillies finely chopped
  6. Fresh coriander leaves finely chopped
  7. Oil 2 tbsp
  8. Salt as per taste
  9. Mustard Seeds 1/2 tbsp
  10. A pinch of turmeric powder and hing

Method :

Cook the rice and keep aside. Take a container on heater add oil. Once the oil is hot add mustard seeds and allow it to crackle. Add green chillies and capsicum and fry it. Add turmeric powder and hing. Add kohlrabi pieces and cook it with closed lid. Add fresh/ frozen peas and cook for few mins. Add salt and add the cooked rice and mix well. Garnish it with fresh coriander  leaves. Serve hot

  2. 1 Bunch of fresh coriander leaves finely cleaned and chopped
  3. 1 Tbsp jeera
  4. 2 to 3 Green chillies finely chopped
  5. 3 Tbsp Oil
  6. Salt as per taste
  7. 1 Tbsp mustard seeds
  8. A pinch of hing and sugar

Method:

Cook the rice and keep aside. Now take a pan on heater add oil once hot add mustard seeds and allow it to crackle. Add  jeera and green chillies and fry it.  Add the coriander leaves and fry it. Add salt and hing and bit sugar and add the cooked rice. Mix well. We can even use ghee instead of oil. Serve hot.

Mango Chitranna

  1. 1 Cup rice
  2. 1 Small cup raw mango grated
  3. 4 Tbsp of peanuts
  4. 2 Tbsp urad dal
  5. 3 Tbsp of oil
  6. 2 Tbsp coriander leaves chopped
  7. 3 Green chillies finely chopped
  8. Salt as per taste
  9. 1 Tbsp mustard seeds
  10. 1/2 Tbsp turmeric powder and a pinch of hing
  11. Few curry leaves
  12. 1/2 tbsp sugar

Method:

Cook rice and keep aside. Take a pan on heater. Add oil and once hot add mustard seeds. Allow it to crackle. Now add urad dal fry it till golden brown. Add Peanuts and fry till golden brown. Add curry leaves , turmeric powder, hing and green chillies and fry it. Add grated mango, salt and sugar and mix well. Now add the cooked rice and mix well.Garnish it with fresh coriander leaves.

Nariyal Bhaat (Coconut Sweet Rice )

Ingredients:

  1. 1 Cup rice
  2. 1 Cup grated coconut
  3. 1 Cup milk
  4. 1/2 tbsp cardamom powder
  5. A pinch of saffron
  6. 4 to 5 cashew nuts cut into pieces
  7. 4 to 5 almonds cut into pieces
  8. Few raisins
  9.  1/2 cup Ghee
  10. 3/4 Cup sugar
  11. 2 to 3 Laung (lavang)
  12. 1 and 1/2 cup water

Method:

Clean the rice with water twice and drain all the water. Now take a container on heater add a tbsp of ghee once hot add lavang and rice and fry it in ghee till we get nice aroma. Now add one and half cup water and one cup milk and saffron and cook the rice. Add grated coconut before the rice is completely cooked and mix well. At least the coconut should be cooked 2 to 3 mins with rice. Once the rice is cooked well turn off heater add sugar and ghee to it. Fry the cashew nut and almonds separately in ghee and add to the rice. Also add  cardamom powder and raisins. Mix well and serve hot.

Ridge Gourd Rice


Ridge Gourd Rice is a easy rice recipe which I tried for the first time and it came out well. It is very uncommon rice dish. It is simple and quick recipe. Try it!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

Ingredients:

  1. 1 Cup Rice
  2. 1 Small ridge gourd  finely chopped (peel off the skin and then chop)
  3. 2 Green chillies
  4. 1 Small capsicum finely chopped.
  5. A small bowl of fresh peas
  6. A pinch of hing
  7. 1/2 tbsp mustard seeds and pepper powder
  8. Salt as per taste
  9. 2 Tbsp oil
  10. 1/2 Tbsp jeera and coriander powder

Method:

Cook rice and keep aside. Take a container on heater add oil and once hot add mustard seeds and allow it to crackle. Add hing. Add green chillies fry it. Add capsicum fry it till they half cooked. Now add ridge gourd pieces cook till they are done also capsicum . Add peas, salt jeera and coriander powder, pepper powder  mix well. Now add cooked rice to it and mix well.Garnish it with fresh coriander leaves.

 

 

 

 

 

 

Rajma Rice (Kidney Beans Rice )

Ingredients:

  1. 1 Cup Rice
  2. 1 Cup rajma
  3. 1 Tbsp jeera and coriander powder
  4. 2 Green chillies
  5. A pinch of pepper powder
  6. 1/2 Tbsp amchur powder
  7. Salt as per taste
  8. 1/2 tbsp mustard seeds
  9. A Pinch of hing and turmeric powder
  10. Oil 2 tbsp
  11. 1 medium size onion sliced thinly
  12. 2 to 3 Garlic cloves
  13. 1 Inch ginger finely chopped
  14. 1 Inch cinnamon stick cut into small pieces

Method:

Soak  rajma overnight. Now drain  water from it and keep aside. Take a pressure cooker pan on heater. Add oil and once it is hot add mustard seeds. Allow it to crackle. Add garlic and ginger and fry it. Add onion and fry till golden brown. Add turmeric powder , hing, cinnamon sticks, rajma and green chillies. Fry it in oil for few mins. Now add the jeera , coriander powder , amchur powder and salt to it mix well. Add 2 cups of water and once the water starts boiling add rice and close the lid. Pressure cook it on medium flame with 3 to 4 whistle. Serve hot.

Broccoli Rice


Broccoli rice is a wonderful  dish. It is quick and easy rice recipe. The rice cooked with broccoli, garlic, green chillies and pepper powder. The recipe also includes cheddar cheese.

Ingredients:

  1. 1 Cup rice
  2. 1 Cup broccoli florets finely cut into small pieces
  3. 1/4 tbsp pepper powder
  4. 4 to 5 cashew nuts cut in to pieces
  5. Salt as per taste
  6. 2  Tbsp olive oil
  7. 2 to 3 garlic cloves cut in to small pieces
  8. Cheddar cheese grated 1/2 a cup

Method:

Wash the rice twice in water and drain all the water and keep aside. Now take a pan on heater add oil once it is hot add garlic cloves and fry it. Add green chillies and broccoli and fry it for 2 mins. Add water 2 cups to it. Salt and pepper powder is also added. Now once the water starts boiling add rice and cook it. When the rice is about to cook garnish it with cheese and cashew nuts so that the cheese melts and cook with the rice. Serve hot.

Kashmiri Pulao


There are varieties of rice recipes. Usually the rice dish is prepared  using vegetables. But here is the rice recipe that is cooked along with the fruits and dry fruits. Yes it is the kashmiri pulao.

Preparation time: 10 mins

Cooking time: 15 mins

Ingredients:

  1. 1 Cup rice
  2. 1 and 1/2 Cup milk
  3. 3 to 4 laung (lavang)
  4. 1 inch cinnamon stick
  5. 2 bay leaves
  6. 1/2 Tbsp cumin seeds
  7. 2 cardamom
  8. 5 to 6 cashew nuts finely chopped
  9. 5 to 6 almonds finely chopped.
  10. Raisins few
  11. 1 cup fruits finely chopped (apple, pineapple, banana)
  12. Salt as per taste
  13. 2 Green chillies finely chopped
  14. 2 Tbsp ghee
  15. A pinch of saffron

Method:

We have to take a rice in a bowl wash thoroughly twice in water and then drain it.

Now take a pressure cooker on heater add ghee. Once the ghee melts add cashew nuts almonds fry it till golden brown. Now add the other spices like cinnamon, cumin seeds, cardamom, green chillies, bay leaves, lavang (cloves) and fry for 2 mins.  Add milk to it. Once milk starts boiling add saffron and rice and cook it with closed lid for 2 whistle. Now open the lid add salt lix well and garnish with the fruits. Serve hot.

Tomato Rice

Tomato Rice is one of the South Indian dish. It is simple and delicious rice recipe. It is usually prepared using tomato puree. But I did it in  different way. It is quiet spicy quick and easy rice recipe. Even there are different methods to prepare tomato rice. We have Mexican tomato rice also but the cooking style and ingredients vary bit. But the tomato rice recipe which I am presenting is normal Indian style.

Ingredients:

  1. 1 Cup Basmati Rice
  2. 3 Tomatoes finely chopped
  3. 3 garlic cloves finely chopped
  4. 1 medium size onion finely chopped
  5. 2 cinnamon sticks finely cut
  6. 2 to3 laung (lavang)
  7. 2 Tbsp red chilli powder
  8. 1 Tbsp garam masala
  9. Oil 2 Tbsp
  10. Mustard seeds and turmeric powder 1/2 Tbsp
  11. Fresh curry leaves and chopped coriander leaves 1 Tbsp
  12. Salt as per taste.

Method:

The rice should be washed thoroughly and soak in water for 10 mins and then drain all the water and keep aside. Now take a pressure cooker pan add oil once the oil is hot add mustard seeds and allow it to crackle. Then the garlic should be added and fried. Now add onion and fry till they are golden brown. Add turmeric powder,curry leaves, cinnamon sticks, lavang and tomato and fry it for few minsAdd the red chilli powder, garam masala, salt mix well. Now for 1 cup of rice we have to use 2 cups of water .So  add 2 cups of water to the ingredients that are being cooked and allow it to boil. Once it  starts boiling add the uncooked rice to it. Close the lid and cook the rice on low flame with 2 whistles.

Garnish the rice with fresh coriander leaves and serve hot.

ALOO GOBI RICE


Aloo Gobi rice is one of the simplest rice recipe which I feel. With only two vegetables aloo and gobi and a bit spices makes a very good taste.

Preparation time : 5 mins

Cooking Time :15 mins

Ingredients:

  1. 1 Big potato peeled off and cut into small cubes
  2. 1 Cup Gobi florets
  3. 1 Cup rice
  4. 1 Tbsp  jeera
  5. 2 to3 small cinnamon sticks
  6. 1 green chilli finely chopped
  7. 1 Tbsp red chilli powder
  8. 1 Tbsp garam masala
  9. Oil 2 tbsp
  10. salt as per taste
  11. 4 to 5 laung
  12. 1 Tbsp mustard seeds and pinch of turmeric powder

Method:

  • Take the pressure cooker on the heater add oil once hot add mustard seeds allow it to crackle.
  • Add jeera, turmeric, cinnamon sticks , laung and fry it.
  • Now add aloo, gobi fry it in oil for 2 mins
  • Add salt, red chilli powder, garam masala mix well and pour 2 cups of water
  • Now once the water starts boiling add rice (rice should washed twice and drain the water)
  • Close the cooker lid and pressure cook it
  • Serve hot

 

 

Carrot Rice


Carrot Rice is a delicious and nutritious recipe which is made from carrot, cashew nuts, raisins and almonds.It also includes the spices like cinnamon, laung. Usually kids like carrot so carrot rice makes good for their lunch box.
Preparation Time: 10 mins

Cooking Time : 15 mins

Ingredients:

  1. 2 Carrots grated
  2. 2 to 3 red chillies
  3. 1 tbsp jeera
  4. 4 to 5 cashew nuts cut into pieces
  5. 4 to 5 almonds cut into pieces
  6. 2 cinnamon sticks
  7. 3 to 4 laung
  8. salt as per taste
  9. 4 Tbsp ghee
  10. 1 tbsp pepper powder
  11. 1 Cup rice

Method:

  • Cook the rice and keep aside.
  • Take a pan on heater add ghee once hot add cashew nuts, almonds, jeera, red chilli, cinnamon sticks, laung and fry it.
  • Add grated carrot and fry it.
  • Add salt, pepper powder, raisins and now pour the cooked rice mix well
  • Serve hot with raitha or vegetable curry

Jeera Rice And Dal


Jeera Rice and Dal is a good combination dish. No much vegetables needed to prepare it and much easy dish we can prepare any time.

The dry fruits added to the rice gives more taste to it and healthy food and kids like them the most. The Jeera rice I prepared is onion and garlic free. But the dal is prepared using onion and garlic.

Preparation time :  10 mins

Cooking time : 30 mins

Ingredients:

For the Jeera Rice

  1. 1 Cup Basamti rice
  2. 2 Tbsp jeera (cumin seeds)
  3. 2 Tbsp ghee
  4. A pinch hing
  5. 1 tbsp ginger
  6. 4 to 5 cashew nuts finely chopped
  7. 4 to 5 almonds finely chopped
  8. 1 Tbsp pepper powder
  9. 2 Green chillies finely chopped
  10. Salt as per taste
  11. Curry leaves
  12. Fresh coriander leaves

Method:

  • Cook the rice in the  cooker with rice to water ratio 1:2
  • Now take a pan on heater add ghee  add  cashew nuts and almonds and fry till they are golden brown.
  • Add green chillies, curry leaves , ginger , hing and cumin seeds and fry it
  • Add salt and pepper powder and stir it.
  • Now add cooked rice and mix well
  • Garnish it with coriander leaves.
  • Serve hot with dal

Ingredients:

For dal

  1. 1 cup dal
  2. 1 small onion finely chopped
  3. 2 to3 garlic cloves finely chopped
  4. 1 tbsp ginger  finely chopped
  5. 2 green chillies finely chopped
  6. curry leaves
  7. 1 Tbsp mustard seeds
  8. 1 Tbsp turmeric powder
  9. Salt as per taste
  10. 2 Tbsp oil
  11. Fresh coriander leaves to garnish
  12. 1 Tbsp lemon juice

Method:

  • Pressure cook the dal
  • Take a vessel on heater  add oil once hot add mustard seeds allow it to crackle
  • Add garlic, ginger and fry it. Add green chillies, curry leaves  and onion and fry till onion is golden brown
  • Now add the cooked dal and salt and  cook it for 5 to 10 mins.
  • Add lemon juice and garnish it with fresh coriander leaves
  • Serve with Jeera rice

Rice Kesar Bath


Kesar Bath is one of my favourite sweet. It is easy and quick sweet that can be prepared any time. I prepared it on durgashtami during navaratri. Everybody liked it. 

Preparation time: 5 mins

Cooking Time: 20 mins

Ingredients:

  1. 1 Cup Rice
  2. 3/4 Cup sugar for mild sweet else 1 cup sugar
  3. 1 Tbsp cardamom powder
  4. 4 to 5 Laung
  5. 4 to 5 cashew nuts made into pieces
  6. 4 to 5 almonds made into pieces
  7. 1/2 Cup ghee
  8. 1/2 Tbsp saffron
  9. A pinch of orange colour
  10. 2 Cup milk

Method:

  • Fry the cashew nuts and almond in the 1 tbsp of ghee till they are golden brown and keep aside.
  • Wash the rice in the water and drain all the water.
  • Now take the pan on heater add 1 tbsp ghee once hot add Laung( Lavang) and rice and fry it till we get nice aroma.
  • Now add milk and saffron to the rice and cook it till rice is done on medium flame.
  • Now add orange colour, sugar, cardamom powder, fried cashew nuts, almond and ghee and mix it well and turn off heater.  ( do not  cook  further once sugar is added).
  • Serve hot

Huggi Gojju


Huggi Gojju is the recipe prepared during Navaratri and Sankranti.

This food is treated as the favourite food of Lord Srinivasa. This recipe is the tasty and spicy .

Here comes the method and ingredients of this recipe!!!!!!!!!!!!!!!!!!!!!!

Preparation Time: 15 mins

Cooking time: 30 mins

Ingredients:

For Huggi

  1. 1 Cup Rice
  2. 1 Cup moong dal
  3. 2 Tbsp ghee
  4. Salt as per taste
  5. 2 Tbsp Fresh masala prepared ( ingredients of masala given below)

For Gojju

  1. 2Tbsp ghee
  2. 1/2 cup tamarind water
  3. 3  to 4 tbsp of grated Jaggery
  4. Salt as per taste
  5. 2 Tbsp fresh masala powder ( ingredients of masala given below)

Fresh masala for Huggi and gojju

  1. 1 Cup grated dry coconut
  2. 2 Tbsp jeera
  3. 4 to 5 black pepper seeds
  4. 2 cinnamon sticks
  5. 2 cardamom
  6. 2 to 4 red dry chiili
  7. 1Tbsp ghee
  8. 4 to 5 Laung

Method :

For fresh masala

  • Fry the ingredients of masala in the ghee and once cooled  grind it into powder.

For Huggi

  • Pressure cook the rice and moong dal together  in a cooker. (1 cup rice+ 1 cup moong dal+ 3 cup water)
  • Take a pan on heater add ghee then add the fresh masala  and fry it then add the cooked rice moong dal to it.
  • Add salt and bit of water and cook it for 5 to 10 mins.

For Gojju

  • Take a small vessel on heater add ghee once hot add the fresh masala to it
  • Fry it and then add tamarind water, salt and Jaggery and boil it till it thickens

Serve hot both  Huggi and gojju

Cluster Beans Rice


Preparation time: 10 mins

Cooking time: 15 mins

Serves 3 people

Ingredients:

  1. 1 Cup basmati rice
  2. 10 to 15 cluster beans cut into small pieces
  3. 2 Green chillies finely chopped
  4. 1 Tbsp cumin seeds
  5. A cup of cabbage and capsicum finely chopped
  6. 2 Tbsp garam masala
  7.  2 Tbsp Oil
  8. Salt as per taste
  9. 1/2 Tbsp mustard seeds and turmeric powder
  10. Pinch of hing

Method

  • Take a container on heater add oil, once hot add mustard seeds, allow it to crackle.
  • Add cumin seeds , cluster beans, cabbage , green chilli , hing and capsicum
  • Cook it for 3 mins
  • Add 2 cups of water then add salt and garam masala
  • Bring it to boil and then add the uncooked rice to it
  • Cook the rice in a medium flame
  • Serve hot

Vegetable Pulao


 

Preparation time: 10 mins

Cooking time: 20 mins

Serves 3 people

Ingredients:

  1. 1 Cup basmati rice
  2. 1 onion cut into big strips
  3. 2 Green chillies cut into big pieces
  4. 2 Garlic cloves finely crushed
  5. 8 to 10  beans cut into fine strips
  6. A small cup  of cauliflower florets and cabbage finely chopped
  7. A small potato finely cut into pieces
  8. A Small cup of grated coconut
  9. 1 Tbsp ginger chopped
  10. 1 Small carrot cut into fine strips
  11. A small cup of peas
  12. 2 Tbsp of Oil
  13. Salt as per taste
  14. 1/2 Tbsp mustard seeds and a pinch of turmeric powder
  15. 2 Tbsp coriander leaves

Method:

  • Cook rice and keep aside
  • Make a paste of ginger, grated coconut and coriander leaves
  • Take a pan on heater add oil, once hot add mustard seeds, allow it to crackle
  • Add garlic and fry it.
  • Add onion and fry it till golden brown then add the coconut paste and fry it
  • Add other vegetables and salt then allow it to cook till they are done
  • Take it off  from heater and then mix the rice well
  • Serve hot

 

Methi Pulao


Preparation time: 15 mins

Cooking time 20 mins

Serves 2 People

Ingredients:

  1. 1 Cup basmati rice
  2. 1 Cup methi leaves finely chopped
  3. A small cup peas
  4. 1 Small capsicum chopped
  5. 50 gram paneer (cottage cheese)
  6. 2 green chillies finely chopped
  7. 1 Onion finely chopped
  8. 2 to 3 garlic cloves finely chopped
  9. 1 Tbsp red chilli powder
  10. 1 Tbsp garam masala
  11. 2 Tbsp Oil
  12. 1/2 Tbsp mustard seeds, pinch of turmeric powder
  13. Salt as per taste

Method:

  • Cook rice and keep aside
  • Take a pan on a heater add oil, once hot add mustard seeds allow it to crackle
  • Add garlic fry it then onion fry it till golden brown
  • Add paneer fry it till golden  brown
  • Add green chillies, capsicum, peas and methi leaves and fry it
  • Once they are cooked add salt , turmeric powder, red chilli powder and garam masala
  • Mix well and cook for 2 to 3 mins
  • Take it off from heater and add cooked rice and mix well
  • Serve hot

Fried Rice


Preparation time: 10 mins

Cooking time : 15 mins

Serves 3 people

Ingredients:

  1. 1 Cup basmati rice
  2. 1 Onion cut into long strips
  3. 1 Small capsicum finely chopped
  4. 2 Green chillies cut into big pieces
  5. 1 Small carrot cut in to big strips
  6. 5 to 6 beans cut into big strips
  7. 2 Garlic cloves finely chopped
  8. 1 Tbsp ginger crushed
  9. 1 Small  bowl shredded cabbage
  10. 1 Small cup finely chopped spring onion leaves
  11. 1 Tbsp pepper powder
  12. 2 Tbsp soya sauce
  13. 2 Tbsp oil
  14. Salt as per taste

Method:

  • Cook the rice and keep aside
  • Take a pan on heater add oil once hot add garlic fry it,  add onion fry till golden brown.
  • Add capsicum , green chilli, shredded cabbage, carrot, beans,  ginger , spring onion leaves and allow it to cook till they are done
  • Add soya sauce, salt and pepper powder mix well and take it off from heater
  • Now add the cooked rice and mix well
  • Serve hot

Cucumber Rice


Preparation Time: 10 mins

Cooking Time : 20 mins

Servings: 2 people

Ingredients:

  1. 1 Cup basmati rice
  2. 1 Small cucumber cut into big strips
  3. 6 to 8 Beans cut cut in to big  strips
  4. 1 small cup cabbage finely chopped
  5. 2 to3 Green chillies
  6. 2 tbsp masala powder (sambar powder)
  7. Salt as per taste
  8. 2 Cups water
  9. Fresh coriander leaves
  10. 1 Tbsp cumin seeds
  11. 2 Tbsp oil
  12. 1/2 Tbsp mustard seeds and pinch of turmeric powder
  13.  1 Small cup grated coconut

Method:

  • Take a container on a heater  add oil to it, once the oil is hot add mustard seeds , allow it to crackle.
  • Add  cumin seeds, green chillies fry it, then  cabbage , cucumber and beans and cook it for 2 mins
  • Add 2 cups of water to it and bit of coriander leaves and grated coconut, masala powder and salt.
  • Allow it to boil
  • Now  add uncooked rice to it ( wash it thoroughly before adding)
  • Cook it till the rice is done
  • Garnish with fresh coriander leaves and  grated coconut
  • Serve hot

Palak Rice


Palak Rice

Preparation time: 10 mins

Cooking time: 15 mins

Servings 2 people

Ingredients:

  1. 1 Cup Basamti Rice
  2. 1 Cup spinach (palak ) finely chopped
  3. 1 Onion finely chopped
  4. 2 Green chillies cut in to big pieces
  5. 1 Small capsicum finely chopped
  6. Fresh peas a small cup
  7. Salt as per taste and 1 tbsp mustard seeds
  8. 2 Tbsp Oil

Method:

  • Cook the rice and keep aside
  • Now take a pan on a heater add oil
  • Once it is hot add mustard seeds and allow it to crackle
  • Add onion and fry till golden brown
  • Add capsicum and peas fry it till they are cooked
  • Add spinach (palak) and fry it for 2 mins
  • Add salt and take it off from heater and mix the cooked rice to it

Nagara Panchami Recipes Tumbittu


Tumbittu

 

Preparation Time: 15 mins

Cooking Time: 15 mins

Makes 12 Tumbittu

Ingredients:

  1.  2 Cup roasted gram dal (phutani) powdered
  2. 1 Cup Jaggery
  3. 1 Cup grated dry coconut
  4. 1 Cup ghee ( clarified butter)
  5. 4 Tbsp til
  6. 5 to 6 Cashew nuts made in to pieces
  7. Raisins
  8. 2 to 3 Tbsp milk

Method:

  • Take container on a heater add Jaggery and milk
  • Allow it to melt and then add ghee to it ( but do not overheat Jaggery it should just melt)
  • Take it off from heater and add roasted gram dal powder( phutani  powder),  grated coconut, til, cashew nuts
  • Mix well and the try to make laddu’s with the hand
  • Fix the raisins on the top
  • We can make them round shapes else the shape shown in the picture (usually not round)

 

 

Sweet Corn Rice


Preparation Time: 10 mins

Cooking Time: 20 mins

Servings 2 people

Ingredients:

  1. 1 cup basmati rice
  2. 1 onion finely chopped
  3. 2 garlic cloves
  4. 1 tbsp ginger crushed
  5. 2 green chillies finely chopped
  6. 1 cup fresh Sweet corn kernels (steamed)
  7. 1 tbsp pepper powder
  8.  2 Tbsp Oil
  9. Salt as per taste
  10. 1 tbsp coriander leaves

Method

  • Cook the rice and keep aside
  • Now take a pan on heater add oil,once hot add garlic and fry, then add onion and ginger and fry it till onion is golden brown.
  • Add green chilli and sweet corn kernels and salt mix well and cook it for 4 mins
  • Add rice and pepper powder mix well and garnish with coriander leaves
  • Serve hot

Mixed vegetable rice


Preparation time : 10 mins

Cooking time: 15mins

Servings: 2  people

 

Ingredients

  1. 1 Cup Basamti Rice
  2. 2 Green chillies chopped finely
  3. 1 Carrot cut into long strips
  4. A small cup of gobi(cauliflower florets)
  5.  5 to 6 Beans cut into long pieces
  6. 1 Onion cut into small pieces
  7. 2 Garlic cloves finley chopped
  8. 2 Tbps Oil
  9. 1 Tbsp mustard seeds and pinch of turmeric powder
  10. 1 Tbsp red chilli powder
  11. 1 Tbsp garam masala
  12. Salt as per taste

Method

  • Cook rice and keep aside
  • Take a pan add oil and once it is hot add mustard seeds as it flutters add garlic and fry it
  • Now add onion and fry till they are golden brown
  • Add remaining vegetables and cook with salt
  • Once vegetable are cooked add red chilli powder and garam masala cook for 2 mins to it settles well with vegetables
  • Add cooked rice  and mix well
  • Serve hot

Mushroom rice


Preparation time: 10mins

Cooking time: 15 mins

Servings: 2 People

Ingredients

  1. 1 Bowl of rice
  2. 5  to 6 mushroom cut into big pieces
  3. 2 Green chillies
  4. 2 Garlic cloves finely chopped
  5. 1 Onion finely chopped
  6. 1 Small capsicum finely chopped
  7. 2 Tbsp  oil
  8. 1 Tbsp mustard seeds and pinch of turmeric powder
  9. 1 Tbsp red chilli powder
  10. 1 Tbsp garam masala
  11. Salt as  per taste

Method

  • Cook the rice and keep aside
  • Now take a pan on heater add  oil
  • Once oil is hot add mustard seeds allow it to flutter
  • Add garlic n fry it
  • Add onion and fry it till they are golden brown
  • Add turmeric powder,  capsicum and mushroom cook till they are done
  • Add chilli powder , garam masala  and salt
  • Now add cooked rice to it and mix well
  • Serve hot

Green Peas Pulao


Ingredient:

  1. 1 Cup Basmati Rice
  2. 1/2 Cup Green Peas
  3. 2 Green chilli sliced into pieces
  4. 1 Onion finely chopped
  5. 2 to 3 garlic cloves finely chopped
  6. 1 Tbsp jeera
  7. 1 Tbsp ginger chopped
  8.  Salt as per taste
  9. 2 Tbsp Oil
  10.  Fresh coriander leaf chopped  to garnish

Method

  • Cook the rice and keep aside
  • Take a pan on a heater and add  oil and once oil is heated add mustard seeds and jeera
  • Add garlic and fry till they are done
  • Add onion and fry till they are golden brown
  • Add peas and green chilli  cook it for 2 mins
  • Add Salt and stir it well
  • Now mix the cooked rice well in the pan and garnish with coriander
  • Serve hot with any vegetable gravy or raita

Mint rice recipe


Ingredients:

1. Basmati Rice 1 cup

2.Peas (small bowl)

3. 1 small size Capsicum finely chopped

4 1  Onion  finely chopped

5.Green  chilli’s (2 to 3)

6. Mint leaves (a bowl)

7 Oil 2 to 3 tbsp

8 Mustard seeds and turmeric

Method

Cook rice and keep aside

Take a pan and heat the oil, Add mustard seeds once it flutters add onion and fry  till golden brown.

Add green chillies and capsicum and peas and allow it  to cook for 5 mins

Add mint leaves and fry it

Add salt and add the cooked rice and mix well

Serve hot

Capsicum Rice Recipe

Ingredients:

1. Basmati Rice 1 cup

2. capsicum (red, green n yellow) cut into big size

3. 1 medium size onion finely chopped

4. garlic 2 to 3 cloves finely chopped

5. green chilli 2 to 3 finely chopped

6. oil 2 tsb

7. peas a small bowl

8.mustard seeds 1 tbsp

Method

1.Cook the  rice and keep aside

2.Take a pan and add oil and once the oil is warm add mustard seeds

3. Add garlic and fry it

4.Add onion and fry it till golden brown

5. Add chillies , capsicum and peas cook it for 5 mins

6.Add salt and stir it and then pour the cooked rice

7.Serve hot
