Vegetable Pulao


 

Preparation time: 10 mins

Cooking time: 20 mins

Serves 3 people

Ingredients:

  1. 1 Cup basmati rice
  2. 1 onion cut into big strips
  3. 2 Green chillies cut into big pieces
  4. 2 Garlic cloves finely crushed
  5. 8 to 10  beans cut into fine strips
  6. A small cup  of cauliflower florets and cabbage finely chopped
  7. A small potato finely cut into pieces
  8. A Small cup of grated coconut
  9. 1 Tbsp ginger chopped
  10. 1 Small carrot cut into fine strips
  11. A small cup of peas
  12. 2 Tbsp of Oil
  13. Salt as per taste
  14. 1/2 Tbsp mustard seeds and a pinch of turmeric powder
  15. 2 Tbsp coriander leaves

Method:

  • Cook rice and keep aside
  • Make a paste of ginger, grated coconut and coriander leaves
  • Take a pan on heater add oil, once hot add mustard seeds, allow it to crackle
  • Add garlic and fry it.
  • Add onion and fry it till golden brown then add the coconut paste and fry it
  • Add other vegetables and salt then allow it to cook till they are done
  • Take it off  from heater and then mix the rice well
  • Serve hot
